Dice the potatoes and carrot into tiny little cubes, cook for about 15 minutes in hot water.
Dice the onion and bell pepper.
Dice the chicken into tiny little cubes.
In a large pan, heat the oil, add the butter and fry the bacon.
When done, take the bacon off and set it aside. Add the diced onion and bell pepper, cook for a few minutes and, add the chicken.
Once the chicken is cooked, add the sweet corn, mix for a while and add the all-purpose flour.
Add the milk, mix until combine and add the chicken broth.
Add the cooked potatoes and carrot, season with salt and pepper.
let it cook for about 10 minutes, mixing sometimes.
Add the cheese and mix until the cheese is melted and mixed in the chowder.
Taste and add more salt if needed.
Spread butter on each side of the bread slice and toast each side.
Dice into cubes.
Add the soup in a plate.
Place the crouton in the center of the soup and sprinkle bacon over the soup.
