A typical Brazilian appetizer is found in most pubs and restaurants in Brazil. The Tapioca Dice (Dadinho de Tapioca) was created on 2004 by Rodrigo Oliveira in São Paulo. Today, we bring this recipe to you.
The Tapioca Dice can also be made with other kinds of cheese and can bring other ingredients such as fish, jerked beef, and other ingredients.
Kindly note to use the correct tapioca on this recipe (the granulated one). The powder one is Goma de Tapioca and it will not work.
Starting by preparing a small baking pan for the dough, cover with plastic wrap.
In a bowl, mix the tapioca with the shredded cheese, sat and white pepper.
Add the hot milk and blend the ingredientes until the dough gets firm.
Let it cool for a few minutes until firm more.
Place the dough in the baking pan and cover with plastic wrap.
Let it cool completely at room temperature and then place in the refrigerator up to 2 hours.
Once firm and cooled, unmold the tapioca dough and cut into dices.
Fry the dices in hot oil until golden. It's also possible to make them in the Airfryer for 15 minutes at 392º F (200º C) or in the oven for 15 minutes at 356º F (180º C).
For the Jelly, chop the red pepper without the seeds.
Peel the apples off, remove the seeds and shred them.
In a pan, add the chopped pepper, the shredded apple, the juice of one lemon, sugar, salt, cinamon powder and water.
Mix all and bring to boil on medium heat.
When boiling, low the heat and cover the pan.
Cook for about 5 minutes.
When done, store the pepper jelly in a covered pot.
Garnish the jelly pepper with the Tapioca Dice.
