In a medium pot, add water, oil, salt, ground annatto or paprika and the chicken stock cube.
Bring to boil. Stir in flour until dough is formed.
Transfer the dough to a flat surface and let it cool.

When the filling is ready, let's get back to the dough.
Grease butter in your hands and knead the dough until smooth.
Pinch a piece of dough and mold the coxinha (if you have a popsicle mold, grease butter into the mold, place the dough, fill it with the chicken stuffing and wrap), if you do not have the popsicle mold, flatten the dough into your hand, put the chicken stuffing in the center, wrap in a popsicle shape. Do not place the popsicle stick yet.
In a plate, whisk the eggs until smooth.
In another plate, add the fine dry breadcrumbs.
Dredge the coxinha in egg and breadcrumbs, then add the popsicle stick.
Heat the frying oil in a medium heat and fry the coxinhas.
When fried, drain on a towel and serve immediately.
